Dicen que la cre\u00f3 <strong>el general Tom\u00e1s de Zumalac\u00e1rregui<\/strong> durante la Primera Guerra Carlista. Buscaba <strong>un alimento nutritivo y barato con el que alimentar a sus tropas<\/strong>. Otra versi\u00f3n cuenta que no fue \u00e9l directamente qui\u00e9n la invent\u00f3, sino que fue una an\u00f3nima ama de casa que le dio a probar el manjar al general. En primer lugar, pelamos las patatas, las lavamos y las cortamos en trocitos peque\u00f1os (cuadrados o cu\u00f1as). Picamos la cebolla. En una sart\u00e9n agregamos abundante aceite, a temperatura media-alta, y cuando est\u00e9 caliente, agregamos las patatas y seguidamente la cebolla. Tapamos y fre\u00edmos a baja temperatura durante 20 minutos, seguimos removiendo para que la cocci\u00f3n sea uniforme. <\/span><\/p>\n<p style=\"text-align: justify; line-height: 15.75pt; background: white;\"><span style=\"font-family: 'Arial','sans-serif';\">Mientras tanto, en un bol grande cascamos los huevos, agregamos una pizca de sal y batimos con energ\u00eda. Las patatas ya est\u00e1n en su punto, escurrimos bien el aceite y las agregamos al bol con el huevo batido. Removemos para que las patatas se impregnen bien de huevo. En la misma sart\u00e9n, pero con solo un poquito de aceite, colocamos la mezcla del bol. <\/span><\/p>\n<p style=\"text-align: justify; line-height: 15.75pt; background: white;\"><span style=\"font-family: 'Arial','sans-serif';\">Y cocinamos a baja temperatura durante 2 minutos. A lo largo de este tiempo, con la ayuda de una lengua de cocina vamos rodeando <strong>la tortilla<\/strong>. Notaremos que la tortilla est\u00e1 cuajada cuando veamos que la base ya tiene una consistencia. Con un plato m\u00e1s grande que la sart\u00e9n, tapamos, damos la vuelta a la tortilla y colocamos de nuevo en la sart\u00e9n. Cocinamos a fuego bajo por 2 minutos m\u00e1s y la tortilla ya estar\u00e1 en su punto.
