1 kg. of tomatoes
2 garlic cloves
1 green pepper
1 tablespoon of cumin coffee
1 bay leaf
A generous spurt of olive oil

How is this dish prepared?
Next we need to blanch the tomatoes. You don’t know how?Don’t worry. We’re going to explain it step by step.First, pour water with a pinch of salt into a pot. While washing the tomatoes, remove the stems and then slice the tomatoes in half horizontally.When the water boils, add the tomatoes.To the side, prepare some ice-cold water. You’re going to add the tomatoes to it after they’ve cooked for two minutes. Don’t throw away the extra tomato water. You’re going to need it later.
After allowing the tomatoes to chill, drain them, remove the skin and cut them into pieces.Next we’ll prepare the sofrito. First peel the onion and cut it into squares. Wash the green pepper and chop into squares.Add oil to a pan and sautée the onion. When the onion is transparent, add the green pepper and the bay leaf. Cook until golden. Then add the tomato and cook for 10 minutes.Now put the garlic, salt and cumin in a mortar and crush into a paste to add to the sofrito.Now the sauce is ready!
